Three Cheese Crostini

Recipe from Harmony Cellars

Ingredients:

½ pound fresh italian sausage (without casings)
½ cup red onion, finely chopped
1 tsp. garlic, chopped
1 tbsp. olive oil
½ cup ricotta cheese
½ cup parmesan cheese, grated
1 cup fresh tomatoes, skinned, seeded and chopped
2 tsp. fresh basil, chopped
1 tsp. fresh thyme leaves, chopped

Directions:

  1. In a medium-sized pan, sauté sausage, onions, and garlic in the olive oil over medium heat for six to eight minutes. Stir and crumble the sausage with a wooden spoon as it cooks. When fully cooked, take off heat, and let stand five minutes.
  2. In a bowl combine sausage mixture with provolone, ricotta, and ½ of the parmesan cheese, tomatoes, basil, and thyme.
  3. Salt and pepper to taste.
  4. Preheat the broiler.
  5. Place crostinis on cookie sheet and put 2 to 3 tbsp. of mixture on to each crostini.
  6. Top with remaining parmesan cheese, and broil for five to six minutes.
