Smokey Chipotle Shrimp
Recipe from Harmony Cellars
Ingredients:
32 large shrimp, shelled, deveined, and rinsed
3 medium mangos
2 medium dikon (Japanese radish)
¼ cup smoked maple chipotle finishing sauce
½ cup fresh cilantro leaves
juice of one lemon
1 T. chili oil
Salt and pepper to taste
¼ red bell pepper (for garnish)
Directions:
- Sauté shrimp in ¼ cup of the chipotle finishing sauce, and set aside.
- Peel the skin the mangos and the dikon.
- Cut into thin long strips, a little bigger than spaghetti.
- Toss together with cilantro, salt, pepper and lemon juice to taste. If you want to add some spice, add some chili oil when you toss the salad.
- Place salad on plate and shrimp on top. Garnish with finely chopped red bell pepper.
