Smokey Chipotle Shrimp

Recipe from Harmony Cellars

Ingredients:

32 large shrimp, shelled, deveined, and rinsed
3 medium mangos
2 medium dikon (Japanese radish)
¼ cup smoked maple chipotle finishing sauce
½ cup fresh cilantro leaves
juice of one lemon
1 T. chili oil
Salt and pepper to taste
¼ red bell pepper (for garnish)

Directions:

  1. Sauté shrimp in ¼ cup of the chipotle finishing sauce, and set aside.
  2. Peel the skin the mangos and the dikon.
  3. Cut into thin long strips, a little bigger than spaghetti.
  4. Toss together with cilantro, salt, pepper and lemon juice to taste. If you want to add some spice, add some chili oil when you toss the salad.
  5. Place salad on plate and shrimp on top. Garnish with finely chopped red bell pepper.
