Skewered Shrimp with Citrus Pesto

Recipe from Harmony Cellars

Ingredients:

32 large shrimp, shelled, deveined, and rinsed
½ cup basil leaves
¼ cup olive oil
1 T. lemon zest
1 T. lime zest
2 T. asiago cheese, grated
1 clove garlic
1 T. pine nuts
1 T. lemon juice

Directions:

  1. Skewer the shrimp lengthwise on bamboo skewers.
  2. Blend all ingredients for the pesto in a food processor.
  3. Place the shrimp skewers in a baking dish, and cover with the citrus pesto. Let chill up to four hours.
  4. Grill for three to four minutes on both sides.
  5. Garnish with fresh basil.
