Grilled Veggie Sandwiches
Recipe from Harmony Cellars
Ingredients:
1 medium yellow bell pepper
1 medium red bell pepper
1 medium eggplant
8 oz. fresh mozzarella
1 fresh loaf of foccacia bread
1 jar of olive tapenade
2 T. fresh basil chopped
1 clove garlic chopped
Salt and pepper to taste
Directions:
- Clean and cut peppers in quarters and eggplant into ¼ inch slices. Marinate vegetables in olive oil, garlic, and basil.
- Grill veggies for four to six minutes.
- Cut loaf of bread in half, and brush with the olive oil marinade. Grill just until toasted, then slice.
- Preheat broiler.
- On half piece of bread place 2 tbsp. of tapenade, 1 piece of grilled bell pepper, one piece grilled eggplant, and two slices of fresh mozzarella. Repeat with half of bread slices.
- Place on cookie sheet, and broil until cheese melts.
- Place top piece of bread on sandwich, and garnish with mix greens.
