Grilled Veggie Sandwiches

Recipe from Harmony Cellars

Ingredients:

1 medium yellow bell pepper
1 medium red bell pepper
1 medium eggplant
8 oz. fresh mozzarella
1 fresh loaf of foccacia bread
1 jar of olive tapenade
2 T. fresh basil chopped
1 clove garlic chopped
Salt and pepper to taste

Directions:

  1. Clean and cut peppers in quarters and eggplant into ¼ inch slices. Marinate vegetables in olive oil, garlic, and basil.
  2. Grill veggies for four to six minutes.
  3. Cut loaf of bread in half, and brush with the olive oil marinade. Grill just until toasted, then slice.
  4. Preheat broiler.
  5. On half piece of bread place 2 tbsp. of tapenade, 1 piece of grilled bell pepper, one piece grilled eggplant, and two slices of fresh mozzarella. Repeat with half of bread slices.
  6. Place on cookie sheet, and broil until cheese melts.
  7. Place top piece of bread on sandwich, and garnish with mix greens.
