Goat Cheese Pizza
Recipe from Harmony Cellars
Ingredients:
4 T. olive oil
6-10 cloves garlic, chopped
½ medium red onion, chopped
1 zucchini, about 6 inches, cut into ¼ inch slices
1 yellow squash, about 6 inches, cut into ¼ inch slices
1 red bell pepper, julienne
1 medium tomato, thin slices
6 oz. goat cheese
2 T. fresh basil, chopped
1 pre-made pizza crust
Directions:
- Heat 2 tbsp. of olive oil sauté garlic, onions, peppers, squash, and zucchini about four minutes or until onions become tender, and remove from heat.
- Evenly lay tomatoes, and sautéed vegetables on top of pizza crust.
- Sprinkle with goat cheese and fresh basil.
- Bake for 10-12 minutes at 500°.
