Goat Cheese Pizza

Recipe from Harmony Cellars

Ingredients:

4 T. olive oil
6-10 cloves garlic, chopped
½ medium red onion, chopped
1 zucchini, about 6 inches, cut into ¼ inch slices
1 yellow squash, about 6 inches, cut into ¼ inch slices
1 red bell pepper, julienne
1 medium tomato, thin slices
6 oz. goat cheese
2 T. fresh basil, chopped
1 pre-made pizza crust

Directions:

  1. Heat 2 tbsp. of olive oil sauté garlic, onions, peppers, squash, and zucchini about four minutes or until onions become tender, and remove from heat.
  2. Evenly lay tomatoes, and sautéed vegetables on top of pizza crust.
  3. Sprinkle with goat cheese and fresh basil.
  4. Bake for 10-12 minutes at 500°.
